Kualitas Madu Dalam Kemasan yang Berbeda di Pasaran Berdasarkan Kadar Sukrosa
It is known that honey contains very high concentration of sugar consisting of fructose 41%, glucose 35%, and sucrose 1,9% in addition to other ingredients. Honey produced by processes which did not involve honey bees or made from other than nectar are considered fake honey. The study tried to perform quality examination on honeys by determining the concentration of surrose in honey, packed and distributed in the market. The examination was carried out by performing iodometric test. The study discovered packaged honey contained sucrose concentration of 8.15% to 31.36%, while the SNI standard No. 01-3545-1994 allows sucrose maximum concentration of 10%. The study also found that only 10% packaged in distribution met the designated requirement, while the remaining stock (90%) did not meet the requirement based on sucrose concentration as designated by the SNI standards
