Preferency Study of Traditional Food in Central Java, Aceh and South Sulawesi (Studi Preferensi Makanan Tradisional di Jawa Tengah, Aceh, dan Sulawesi Selatan)
The purpose of the study was to identify and determine traditional food and it's preference in Central Java, Aceh, and South Sulawesi. A total of 99 traditional foods were identified. Many respondents consumed traditional foods frequently. The reasons were: tasty, easy to buy, and cheap. From a total of 18 traditional foods in Central Java 8 had good preference. One of them, nasi gandul pati was chosen because it had potential to develop as catering food. In Aceh, 4 traditional foods had good preference, the other six were chosen by researcher for its potential. In South Sulawesi, there were 11 traditional foods chosen; two of them were chosen by researchers.
