Antitrypsin Inhibitor through the Activities of Trypsin on Soybean (Uji Daya Hambat Zat Antitripsin terhadap Aktivitas Tripsin pada Bungkil Kedelai)
The soybean pellet is the end product of soybean, used for the protein source for animal feeding. Viewing from how the processing is done, antitrypsin is suggested present which may disturb the protein dissociation by trypsin. To prove this problem, the experiment was done by testing antitrypsin inhibitory activity against 100 ppm trypsin activity with 300 ppm BAEE substrate, which was measured with spectrophotometer. From 5 repeated treatments, the extract of the soybean pellet (free from lipids) on the 15 percent level could inhibit the trypsin activity about 65.17 percent. The diluted extract of the pellet concentration at 7.50 percent, 5.00 percent and 3.75 percent level showed the decrease of the trypsin activity about 40.88 percent, 30.13 percent and 22.75 percent. It can be concluded that the soybean pellet still contains the antitrypsin substance which can inhibit the trypsin activity.
