Uji Bilangan Asam Margarin yang Beredar di Kota Kupang Nusa Tenggara Timur
The need of the community of butter is quite high because better is very much used by community member especially street food selers. Butter and food confuntion to improve the taste, develop and soften cakes it its making process. Butter is also used as substintute of frying oil. The objective of this study is to identify acid count which is counted as free fatty acid contained in butter being sold in Kupang Acid count is the amount of NaOH solution which is used to neutralize free fatty acid in one gram of butter. This study is a descriptive study intitrasi alkametri test method. This study is done in 5 samples of butter being sold around Kupang City meets the standard acid count as stipulated as stipulated as Indonesian National Standard (SNI) No: 01-3451-1994 which is at 3% w/w. For community in Kupang City, itis expected for them to consume packed butter which is still acceptable.
