Total Microorganism, Hygiene and Sanitation of Siomay Vendor Arouns Mayestic Trade Centre
Siomay is steam hawker food made of mixure of fish and flour, supplemented with vegetables (cabage and bitter melon), potato and tofu. WHO 2001 declared that siomay is one of food hawker that can be a source of diarrhea, and contain many microbial pathogents. This survey research and quantitative analyses aims to determine the total number of microbial siomay sold around Mayestic trade centre with TPC method and hygiene-sanitary of siomay merchants with the tools of observation using questioner list. TPC results obtained from marchants no-8,4,1, and2 respectively as 10x 106, 22x105,11x105 and 15x104 colonies/gram. All four vendors did not meet American Foood Safety Standard. While vendor no-3,5.6, and 7 each contain as many as TPC 96x 103, 20x103,20x 103, dan 63x102 colonies/gram respectively. The entire merchant has personal hygiene and sanitationequipment in the category of moderate, while for traders environmental sanitation to 5,6, and 7 have a good environmental sanitation. Five other traders have environmental-sanitation in the category of morerate. Individual hygiene aspects, sanitation equipment and environmental sanitation is very important to note, because these aspects have a tendency effects the number of TPC. This research should be continued in order to know the type of microorganisms that exist in the food hawker Siomay.
