Pembuatan Jahe Instant Tinggi Kalsium untuk Upaya Pencegahan Osteoporosis.
Calsium is an essential macro mineral which is needed for teeth and our bone. Less intake of calcium and unbalanced absorption in the body could cause asteoporosis. One effort for increasing calcium consumption is to provide food product with high calcium contain, Adding calcium in instant ginger drinking product could be an alternative way to provide food products which contains high calcium. However, the fortification of calcium phosphate in food could the orginal taste of the food and become bitter. This study ams to produce instant ginger with high calcium and with acceptable taste for drinking. The was an experimental study with randomly group design. There were six treatment levels with three times reperepetations. The treatments were including: no calcium added, adding 50 mg calcium, 100 mg, 150 mg, 200 mg per 25 gr instant ginger. RThe average of instant ginger rendement was 51.13% with very low water density between 1.21 and 1.50%. The calcium ion was between 10.72 ng and 49.76 mg per 25 gram instant ginger.The study found that adding calcium phosphate in instant ginger could change color, texture, and taste of the instant ginger without changing its smell. The highest calcium phosphate added with 250 mg per 25 gram instant ginger organolepticly still acceptable to consume with 49.76 mg calcium ion per 25 gram instant ginger for every drink.
