Identification Study of Specific Taste of Traditional Food in Central Java, Aceh and South Sulawesi (Studi Identifikasi Rasa Spesifik Makanan Tradisional di Jawa Tengah, Aceh, dan Sulawesi Selatan)
The objective of the study was to analyze penelist preference of specific taste of traditional foods from Central Java, Aceh, and South Sulawesi. Penelists were student at GMSK-IPB who came from many provinces. Organoleptic test showed penelists liked all traditional foods from Central Java, disliked 4 kinds of foods from Aceh (Asam Keu'eung Engkeut, Gule Tiyai, Arsik Ikan Mas, and Gule Pleik'U), and also disliked 6 foods from South Sulawesi (Nasu Manu Likku, Gagape Ayam, Gagape Daging, Pallu Kanro, Sate Makassar, and Sayur Rebung). Hot and salty taste should be considered improve the specific taste of traditional foods.
